3 Green & Healthy Recipes for St. Patrick’s Day

Happy St. Patrick’s Day!

Did you know that there are about 30 million Americans of Irish descent but only 4 million people actually living in Ireland today?

Many of today’s St. Patrick’s Day traditions are actually Made-in-America, not Ireland. The traditional feast did originate in Ireland, though. We’d like to propose greening it up, but not through food colorings.

Here are 3 simple ways to green your day, and healthify it as well.

1. Green Smoothie

Start with milk or variant, toss in a banana, kale or spinach leaves, and add a touch of honey. Pulse away and enjoy.

2. Greens Salad with Green Tahini Dressing. Place the contents of a pre-washed green mix in a bowl. Add diced scallions and Tomatoes. Place a chopped bunch of Italian parsley into a blender. Add one garlic clove, the juice of one lemon, and one cup of water. Pulse until smooth. Pour into a small bowl and add half a cup of raw tahini. Mix well and add salt to taste. Pour over salad and enjoy.

3. Avocado Boat. Halve an avocado. Top each half with a squeeze of lemon juice and sprinkle with salt. Scoop out with a teaspoon and enjoy.
